I am making a new "kid friendly" dish from my Simon Delivers order:

Tender pork chops cooked until lightly brown and then simmered in an apple juice and onion mixture make a quick and delicious meal.
SERVES: 4
PREP TIME: 5 Minutes
COOK TIME: 15 Minutes
Ingredients
1 tablespoon flour

1/4 teaspoon salt
1/4 teaspoon pepper
4 pork loin chops
2 teaspoons butter
1/2 cup onion, sliced
1 cup apple juice

Directions
Combine flour, salt, and pepper in a small bowl. Dip pork chops in flour mixture; coat lightly.
Melt butter in skillet pan over medium heat. Add pork chops; cook for 3-4 minutes or until brown on one side.
Turn over pork chops and stir in onion and apple juice; bring to a boil. Reduce heat to low, cover, and simmer for 7-8 minutes.

Oh and speaking of farm animals and food. I was at a meeting yesterday of the NCBTA and this Irishman was talking about being "Green" in business travel. He brought up FOOD in meeting planning as a way to go green...buy locally and all that. WAY extreeme, but he has a point.


Also, he said "ME - thane" for the gas we all know comes from cows and sheep. It was funny to ME....
