Last Saturday Target had whole broccoli on sale for $1.24 each.
I bought two.
I cut the tops off, tossed with olive oil, salt, and pepper. Roasted them at 400 degrees for 15 to 20 minutes and served them for dinner with our chops.
I peeled the stalks and sliced them about 1/2 inch thick. I sautéed them with onion and olive oil, salt and pepper.
When softened I added a little cayenne, garlic, and all the other leftover veggies in my fridge. A baked potato, sliced tomato, and a bit of avocado.
I added one box of stock. I used chicken, but whatever you have works, and brought to simmer for 15 minutes.
I fished out half the soup, cooled a bit, and blended until smooth and added back to the rest of the soup. Voila, three lunches!
The last of the roasted broccoli? It ended up on two salads.
That is how you work a deal.

That's most definitely how you work a deal! I really should eat more broccoli. I only like it raw though and when I buy it, I don't eat it quick enough so it spoils.
The soup sounds delicious! I have to remind myself to use the stalks. I put them in my food processor and shred them, then mix them with cole slaw for my own broccoli slaw.
